2015 Intrinsic Pinot Noir
Hand picked ealy/mid April, from three dry grown blocks at Eastern Peake 1983, 1989 & 1994. Whole bunch ranges from none To 10%, destemmed to keep 70% whole berry 30% crushed.
Fermented in 3 ton open concrete wax linned fermenters with no additions, indigenous yeasts.
Fermentation took 3-4 days to kick off.and 3-4 wks extended post maceration.
Pressed direct to barriques. 12 months in cask sulphur only added after Malo in November/
December. Racked to tank for 6 months of resting.
Sulphur prior bottling (total 40 ppm) and due to the nature of our site there are never any adjustments made to the wines.
